I first learned of Maytag blue cheese about 7 or 8 years ago while watching Emeril Lagasse’s show on The Food Network. I can’t recall the recipe, but Emeril raved about this extraordinary blue cheese from Iowa… and I was intrigued.
I immediately ordered some and fell in love with it. The cheese is indeed formed into wheels and aged in caves in Iowa, and it combines jaw dropping flavor with the creamiest texture I’ve ever experienced in a blue cheese.
Crumbled over a salad dressed with oil and vinegar, it adds an incredible jolt of flavor and a terrific contrast in texture to that of the greens. Use it in mashed potatoes, or over steaks – it truly is worth trying if you love blue cheese.

Caves in Iowa? Hard to believe. Sure it’s not a chilled warehouse or cellar? Well I’m always open to an update in geology/geography but that one sounds weird!

The story may be somewhat apocryphal – although the caves are still mentioned on their website. Caves or not, the cheese is incredible!
