Looking for a great recipe for a lazy weekend dinner? This recipe is simple, straightforward and will fill your home with wonderful aromas all afternoon long. Plus, you’ll enjoy one of the most tender and tasty roast chickens you’ve ever had! All you need is a roasting chicken, some common spices, and an onion and an apple:
Prepare a dry rub:
- 2 teaspoons salt
- 1 teaspoon paprika
- 3/4 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon thyme
- 1/2 teaspoon white pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
Take a whole roasting chicken – perhaps 3 lbs. or so – and rinse & dry it thoroughly.
Cut a medium size onion into 8 sections; core a granny smith apple and also cut it into sections.
Rub the spice mixture all over the chicken and inside the cavity. Stuff the cavity with the apple and onion sections.
Place the chicken on a roasting pan and roast uncovered for 5 hours @ 250°. Baste occasionally if you wish, although it’s not an absolute necessity. NOTE: yes, 250º!
Serve the onions and apple on the side; serves 2-3.
